We recently made this DELISH Granola, which is high in protein, fibre & healthy fats, & we just had to share!
Who knew eating chick peas for breakfast could taste so damn good ;-p
Home-made Breakfast granola
(serves 8)
4 Tbsp LSA (Linseed, soy, almond, ground)
1 x 440g can chickpeas, drained & rinsed
2 cups rolled oats
¼ cup buckwheat kernels
¼ cup pepitas (pumpkin seeds)
¼ cup almonds, crushed
¼ cup peanuts, halved
½ cup sultanas (or you could use any dried fruit you prefer, cut into small chunks)
½ Tbsp cinnamon
1 Tbsp honey
¼ cup olive oil
pinch salt
METHOD:
Preheat oven to 180 °C
Line a large baking tray with baking paper.
Combine LSA & ½ cup warm water in a bowl, and allow to sit until the water has been soaked up.
Place chickpeas, oats, pine nuts, pepitas, almonds, peanuts & sultanas (or dried fruit) in a large bowl, and sprinkle with salt. Add LSA mixture, oil, honey & cinnamon. Mix until well combined, then spread out evenly on the lined tray.
Bake for 50 minutes, turning occasionally. Leave to cool on the tray and allow to dry.
*Transfer any unused portions to an airtight container – keeps for a week *
Serve with a dollop of Greek yoghurt for ultimate deliciousness!!
