4 Tbsp LSA (ground linseed, soy, almond)
2 cups rolled oats
¼ cup buckwheat kernels
¼ cup pepitas (pumpkin seeds)
¼ cup almonds, crushed
¼ cup peanuts, halved
½ cup sultanas (or you could use any dried fruit you prefer, cut into small chunks)
½ Tbsp cinnamon
1 Tbsp honey
¼ cup olive oil
Preheat oven to 180 °C
Line a large baking tray with baking paper.
Combine LSA & ½ cup warm water in a bowl, and allow to sit until the water has been soaked up.
Place oats, pine nuts, pepitas, almonds, peanuts in a large bowl, and sprinkle with salt. Add LSA mixture, oil, honey & cinnamon. Mix until well combined, then spread out evenly on the lined tray.
Bake for 35 minutes, turning occasionally. mixture should be golden. Leave to cool on the tray and allow to dry.
Add sultanas or other dried fruit after cooking. Also great with some shredded coconut!
