Marinated pork Salad
500g pork fillets, sliced into strips
3 Tbsp extra virgin olive oil
1 tsp cajun spiced mix
1 cos lettuces, shredded
1 onion, sliced
1 avocado, sliced
250g cherry or grape tomatoes, quartered
1 lebanese cucumber, diced
1 lime, juiced
In a medium sized bowl, mix together 1 Tbsp oilve oil & cajun spice mix. Add pork slices, toss to cover, and refrigerate for at least an hour.
Heat a large frypan over medium heat, and cook pork slices for 4 minutes one side, then turn and cook for a further 3 minutes on the other side. Remove from heat.
In a small bowl, mix lime juice & 2 Tbsp olive oil.
In a salad bowl, toss lettuce, onion, tomato, cucumber & avocado. Add pork, then drizzle with dressing & serve.
