Mexican bean bowl
1 cup brown rice
1 x 440g can kidney beans, drained & rinsed
1 x 440g can corn kernels
1 red onion, diced
1 lebanese cucumber, diced
1/4 cup coriander, diced
1 Tbsp red wine vinegar
225g cherry tomatoes, diced
4 Tbsp Greek yoghurt
4 Tbsp Guacamole
Cook rice per packet instructions (you can use the microwaveable portions to save time if you like).
In a bowl, mix together corn, onion, coriander, cucumber & red wine vinegar.
Make guacamole as per this recipe.
Dish out even portions of rice, beans, corn salsa, grated cheese, tomatoes & top with guacamole & yoghurt. Delish!!
