quinoa pear & apple porridge
2 cups quinoa
1 tsp coconut oil
2 cups boiling water
1 apple, cored & roughly diced
1 pear, cored & roughly diced
1/2 cup milk of your choice
3/4 cup mixed natural nuts, roughly chopped
2 tsp cinnamon
2 Tbsp honey or maple syrup
Soak quinoa in a bowl of water – aim for an hour.
Heat the coconut oil in a medium saucepan on medium heat, add the quinoa, stir for 1 minute, then add the boiling water. Once boiling, reduce heat & simmer. Stir through apple & pear. Cook for a further 15 minutes – until water is completely absorbed.
Stir through milk, nuts, honey or maple syrup & cinnamon before serving.
*Delicious with a dollop of Greek or coconut yoghurt on top!*
*Also great using other fruits – choose whatever is in season!*
