BROCCOLI NUGGETS W/ TZATZIKI
250g broccoli florets
3/4 cup panko breadcrumbs
3/4 cup shredded tasty cheddar
2 spring onions, finely chopped
1 Egg, lightly whisked
20g butter, melted
Tzatziki, to serve
Preheat oven to 230°C . Line a baking tray with baking paper.
Boil broccoli for 3 minutes (until tender), than drain & set aside to cool.
Finely chop broccoli.
In a medium bowl, combine broccoli, breadcrumbs, cheddar, spring onions, egg and melted butter. Using a wooden spoon, mix until very well combined. Transfer mixture to the fridge and chill for 20 mins.
Roll tablespoonfuls of broccoli mixture into balls, then place evenly on baking tray.
Bake for 10 mins or until undersides are golden. Flip over (& cook for a further 5 minutes. Nuggets should be golden all over. Cool slightly then serve with tzatziki.(Click link for recipe).
