CARAMEL CHIA PUDDING
2 cups unsweetened almond milk
½ cup chia seeds
1 tsp vanilla extract
1 Tbsp honey (or maple syrup)
3 medjool dates
1/2 Tbsp natural nut butter
In a blender, blitz dates & nut butter with 2 Tbsp almond milk. Set aside.
Ina bowl, whisk remaining almond milk and chia seeds with vanilla extract. Add honey & stir through. Add date & nut butter mix and stir until all ingredients are combined.
Refrigerate overnight in an airtight container. Top with berries or sliced banana to serve.
*You can make a large batch of ‘caramel’ to have on hand, blitzing 1 cup medjool dates, 2 Tbsp natural nut butter & ¼ cup almond milk *
