Pesto chicken avocado & pasta salad
300g penne pasta, cooked & cooled
90g basil pesto
1 avocado, peeled & diced
250g sun-dried tomatoes
2 eggs, hard boiled & sliced
150g baby spinach leaves
2 Tbsp lemon juice
½ cup Greek yoghurt (also great with coconut yoghurt!)
Cook pasta as per packet instructions, Drain & set aside to cool.
Combine baby spinach, sun-dried tomatoes, egg, avocado & pasta in a bowl. Toss through pesto & dress with a squeeze of lemon & dollop of Greek Yoghurt.
*Also delicious with fresh cherry tomatoes in place of sun-dried tomatoes *
