1 440gm can chickpeas, drained and rinsed
1 tablespoon olive oil
3/4 teaspoon chili powder
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
Preheat oven to 190 degrees.
Spread chickpeas in a single layer on a greased baking tray. Bake for 30 minutes, stopping to shake the pan to toss chickpeas occassionally.
Remove chickpeas from heat.
In a bowl, combine oil, chilli powder, thyme and salt.
Add chickpeas to bowl, mix to coat.
Return chickpeas to tray and bake for a further 10 minutes, until golden
Serve warm or cooled.
*If you don’t like chilli, replace with mixed herbs or other spices. Try garam masala, rosemary, cumin *
