SUN-DRIED TOMATO & ARTICHOKE DIP
250 gm artichokes
1 clove garlic
½ cup sun dried tomatoes, chopped
½ cup basil leaves
½ cup crumbled danish feta
2 tsp lemon juice
¼ cup pine nuts
Combine artichokes, feta, garlic, lemon juice, 2 tsp water, and puree until smooth.
In a separate bowl, combine tomatoes, pine nuts, and artichoke puree. Season with salt & pepper.
