2 zucchini, grated
1 cup wholemeal flour
1 tsp baking powder
1 large onion, diced finely
200g short (rindless) bacon, diced
1 cup tasty cheese, grated
¼ cup extra virgin olive oil
Preheat oven to 180 degrees C. Grease a large pan.
Beat the eggs in a bowl, add flour & continue to beat until smooth. Add zucchini, onion, bacon, cheese, oil and stir to combine.
Pour mixture into greased pan & bake for 30 minutes (or until cooked through). Remove from heat, allow to cool then slice into snack sized squares. Stores in the fridge for 3 days.
