ALMOND MEAL PORRIDGE

(SERVES 4)

 

1 cup almond meal

1 Tbsp chia seeds

2 Tbsp flax seeds

½ tsp ground cinnamon

1 Tbsp coconut oil

2 cups almond milk

1 Tbsp honey

¼ cup shredded coconut

2 Tbsp pepitas

125g blueberries

1 banana, sliced

 

In a saucepan combine almond milk, almond meal, flaxseeds, coconut oi, cinnamon, honey, and chia seeds.  Bring to the boil over medium heat, stirring continuously. Once boiling, reduce heat to a simmer & cook until mixture thickens slightly. Remove from heat.

 

Dish out & top with coconut, banana, pepitas & blueberries to serve.
