500g salmon fillets (skinned & boned), diced
2 Tbsp red curry paste
1 Tbsp fish sauce
1 lime, juiced
2 green onions, diced (can substitute with 1 small onion)
1/4 cup fresh coriander, chopped
1/4 cup soy sauce or tamari
In a food processor, blend fish until smooth. Add curry paste, fish sauce, lime juice, green onion, coriander & pulse until combined.
In a large frypan, add oil and heat on medium heat. Spoon out mixture into patties, add to frypan and cook for 3 minutes each side, until browned on the outside & cooked through. Remove from heat & repeat until all the mixture is cooked (should make 12-15 patties depending on size).
Serve with a large salad & soy sauce dipping sauce.
