Sweet potato & Kale Frittata
1 sweet potato, diced
2 Tbsp olive oil
2 cups kale, stem removed & chopped
1 onion, diced
2 cloves garlic, minced
salt & pepper
In a large bowl, whisk together eggs, salt & pepper.
In a large frypan, add 1 Tbsp olive oil & bring to medium heat.
Sauté sweet potato for 10 minutes.
Add onion & kale & cook for a further 3 minutes.
Add garlic & remaining oil & cook for a further 3 minutes.
Pour eggs over vegetables & sprinkle with feta.
Remove from cooktop & place under grill in oven. Cook for 12 minutes, or until set.
Serve with a fresh garden salad.
