2 tablespoons Olive Oil
1 yellow capsicum, diced
1 red capsicum, diced
1/2 head broccoli, cut into florets
200g snow peas, cut in half
2 carrots, grated
2 cloves garlic, minced
1/3 cup sodium reduced soy sauce or tamari
1/4 tsp ground ginger
2 tsp sesame oil
salt & pepper to taste
1 packet rice or egg noodles
In a small bowl, make sauce by whisking together the soy sauce, sesame oil and ground ginger. Set aside.
In a large saucepan of boiling water, cook the noodles per packet instructions.
Whilst the noodles are cooking, heat 1 Tbsp olive oil in a large frypan over medium heat. Add the vegetables to the frypan and cook until tender, stirring occasionally. Add sauce & garlic. Season with salt & pepper.
Add the noodles and cook an additional minute. Serve!
