(Gluten, nut & dairy free)
This is a delicious, rich twist on the classic brownie and definitely a much healthier version packed full of vitamins & minerals. But remember – it’s still a treat for special occasions 😉
INGREDIENTS (Makes 16)
1 medium sweet potato, grated
2 eggs
2 tsp vanilla extract
1/2 cup melted coconut oil
1 tsp baking powder
1 tsp bi-carb soda
1/2 cup raw cacao
3 Tbsp molasses
1 Tbsp maple syrup
2 1/2 Tbsp coconut flour
METHOD
1. Preheat oven to 185 degrees
2.Combine grated sweet potato, eggs, vanilla, coconut oil, molasses & maple syrup in a bowl.
3. Add raw cacao, baking powder, bi-carb soda & coconut flour. Stir to combine.
4.Pour the mixture into a tray lined with greased
baking paper. 5. Cook for 25-30 minutes.
6.Remove from heat and allow to cool for 20 minutes before
cutting to serve.
